Italian Honey Beet Salad

INGREDIENTS
- 3 oz fresh spinach
- 3 oz fresh arugula
- 6 beets
- 1⁄2 cup feta
- 1 tbsp walnuts
- salt & pepper to taste
- 1 tbsp Italian Honey Balsamic Vinegar
- 1 tbsp olive oil (suggestion: SY Herbal, Arbequina or Koroneiki)

- Orange or Peach slices
- Goat cheese
DIRECTIONS
- Preheat oven to 400 degrees. Place the fresh spinach and arugula in a large bowl. Mix or whisk the olive oil and balsamic vinegar together and set aside.
- Roast beets whole for 45 minutes. Slice the cooked beets and place on top of the spinach and arugula.
- Then sprinkle on feta and sliced walnuts. Drizzle olive oil of choice and Italian Honey Balsamic mixture.
- Garnish with cracked pepper and salt to taste then mix. Enjoy!
