Beet salad with greens in a large bowl

Italian Honey Beet Salad

INGREDIENTS

DIRECTIONS

  1. Preheat oven to 400 degrees. Place the fresh spinach and arugula in a large bowl. Mix or whisk the olive oil and balsamic vinegar together and set aside. 
  2. Roast beets whole for 45 minutes. Slice the cooked beets and place on top of the spinach and arugula. 
  3. Then sprinkle on feta and sliced walnuts. Drizzle olive oil of choice and Italian Honey Balsamic mixture. 
  4. Garnish with cracked pepper and salt to taste then mix. Enjoy!
