Lemon Olive Oil Pancakes

INGREDIENTS

  • 1 cup flour
  • 1 tbsp sugar
  • 1 tsp baking powder
  • ¼ tsp baking soda
  • Pinch salt
  • ¾ cup milk or buttermilk
  • 1 egg
  • 2 tbsp Lemon Infused olive oil
  • Zest of ½ lemon
  • ½ tsp vanilla

DIRECTIONS

  1. Mix dry ingredients with a whisk or fork.
  2. Whisk wet ingredients separately.
  3. Combine gently (don’t overmix).
  4. Cook on a medium skillet until bubbles form, flip, finish.
  5. Serve with your favorite toppings (see below). You can always add an extra drizzle of Lemon Infused olive oil for a finishing touch!

Good toppings:

  • Fresh berries or bananas
  • A drizzle of honey
  • A spoon of Greek yogurt
  • Light dusting of powdered sugar
