Lemon Olive Oil Pancakes
INGREDIENTS
- 1 cup flour
- 1 tbsp sugar
- 1 tsp baking powder
- ¼ tsp baking soda
- Pinch salt
- ¾ cup milk or buttermilk
- 1 egg
- 2 tbsp Lemon Infused olive oil
- Zest of ½ lemon
- ½ tsp vanilla
DIRECTIONS
- Mix dry ingredients with a whisk or fork.
- Whisk wet ingredients separately.
- Combine gently (don’t overmix).
- Cook on a medium skillet until bubbles form, flip, finish.
- Serve with your favorite toppings (see below). You can always add an extra drizzle of Lemon Infused olive oil for a finishing touch!
Good toppings:
- Fresh berries or bananas
- A drizzle of honey
- A spoon of Greek yogurt
- Light dusting of powdered sugar
