Garlicky Green Bean Casserole

INGREDIENTS

  • 2 lbs fresh green beans, ends trimmed
  • 1-2 tbsp of Garlic Infused olive oil
    • 1 tbsp  
    • 1⁄2 tbsp
  • 1 cup sliced mushrooms
  • 1⁄2 cup heavy cream 
  • 8 oz cream cheese, softened
  • 1⁄2 tsp onion powder
  • Salt and pepper to taste
  • 1 medium red onion, thinly sliced
  • 2 cups crispy pork rinds or store-bought fried onions
  • 1⁄4 cup freshly grated Parmesan cheese 

DIRECTIONS

  1. Prepare the green beans: Preheat the oven to 425°F. Steam the green beans in a pot with a steamer basket until tender, about 5 minutes.
  2. Sauté the vegetables: Heat 1 tablespoon of Garlic Infused olive oil in a skillet over medium heat. Add the mushrooms and sauté for 5 minutes, or until soft and browned.
  3. Make the sauce: Add the cream cheese, heavy cream, garlic powder, onion powder, salt, and pepper to the skillet. Mix well until everything is combined and the sauce is smooth.
  4. Combine and assemble: Add the steamed green beans to the sauce in the skillet and mix to coat them evenly. Pour the green bean mixture into an oiled casserole dish.
  5. Create the topping: In a separate bowl, toss the thinly sliced red onion with 1⁄2-1 tbsp of olive oil. For a homemade crispy topping, you can also mix crushed pork rinds or Panko breadcrumbs with grated Parmesan cheese.
  6. Bake the casserole: Spoon the topping over the green bean mixture in the casserole dish. Bake uncovered for 10–15 minutes, or until the topping is golden and the casserole is bubbly around the edges.
  7. Serve: Let the casserole cool slightly before serving. Enjoy!
