Chili-Rubbed Pork Chops

INGREDIENTS

  • 6 (4 ounce, ¼ inch thick) bone-in-center-cut pork chops
  • 3 tbsp Garlic Infused Olive Oil 
    • if you want extra garlic flavor: 2 cloves garlic, minced 
  • 1 tbsp chili powder
  • 1 ½ tsp kosher salt
  • 1 tsp sweet paprika
  • 1 tsp dried oregano

DIRECTIONS

  1. Prepare a grill for direct over medium heat high (450 F). Lay the pork chops on a baking sheet in an even layer.
  2. In a small bowl, stir together the olive oil, garlic, chili powder, salt, paprika, and oregano to form a paste.
  3. Spread the paste evenly over both sides of the pork chops. Set aside at room temperature for up to 30 minutes.
  4. Grill the pork chops with the lid closed until nicely grill-marked on one side (2-3 minutes). Turn and cook 1-2 minutes longer, until cooked through but still juicy.
  5. Transfer to a platter and let rest for a few minutes.
  6. Serve with your choice of sauce or salsa.
